I stumbled upon a great resource this afternoon and I've added several recipes to Pinterest. Man, diabetics eat amazingly well! I was pleasantly surprised with almost all of the recipes I found. The hubs brought home some fresh asparagus the other day and I decided to try one of the recipes I had pinned; Roasted Asparagus (see image). I have tried asparagus so many ways and never liked it so I wanted to give it one more shot before I threw up my hands.
I'm just not meant to eat asparagus, I guess. I tried this recipe and didn't like it. It smelled really good in the oven and I managed to eat a few pieces but I just couldn't eat more than a few. I'm almost disappointed that I don't like it because it's such a great food for people with diabetes. But, that just means I'll have to eat more broccoli, which is a "super food", so the experts say.
I'm really starting to get into this now. Starting tomorrow I resume Gold's Gym Cardio workout and I'm going to work in either walking or biking after dinner with the family. The boys love riding their bikes so we may just be doing that. Either way, it's exercise and it beats sitting around on my butt after dinner. We've also decided to set our dinner time as 5:00 so we still have plenty of daylight left afterwards.
It's time for me to get prepared for tomorrow - busy, busy day.
