Eating like a Queen

I spent this afternoon next to my wonderful husband looking for new dishes to try. Not a bad way to spend a day, huh? Now that I'm having to entirely change the way I eat and what I eat, my husband is also making some changes. I told you he was great! Anyway, we found some pretty good recipes for tonight's dinner. Unfortunately, my husband didn't like his. But, my dinner was freaking awesome!
Tonight's dinner was pizza and bruschetta. Bruschetta was my appetizer and it was made using a whole wheat baguette (5 slices), fresh tomatoes (2 medium, diced), extra light olive oil (2 Tbsp), and Italian seasoning (to taste). I broiled the slices of baguette in the oven to toast them. I mixed the oil, Italian seasoning, and tomatoes together and topped the baguette slices with it. The olive oil mixture was a little different than what I'm used to but it was really good; definitely something I'm going to make again. I wonder if I can buy tomatoes already diced? That would save a lot of time.

Originally, I was going to use wheat tortillas to make little pizzas but, while in the grocery store, I found whole wheat crusts so I bought a package. My pizza consisted of the following:

  • 1 whole wheat crust
  • 2 cups tomato sauce (seasoned with Italian seasoning and garlic powder)
  • 1 3/4 cups low-fat mozzarella cheese
  • 1 cup green bell peppers (cut in strips)
  • 1/2 cup diced tomatoes (left over from the bruschetta)
  • 1 cup of sliced mushrooms
I was a little worried about how it was going to taste but, as it turns out, I worried for nothing. That pizza was bangin' and definitely something I would have paid for (yes, I paid for my groceries, but you know what I mean). I wanted to try something a little different so I put my cheese on top of all the veggies. I don't recommend doing that. It didn't alter the taste at all but it was difficult keeping the cheese on the crust. The next time, I'll go back to adding my veggies after the cheese. 

That was my dinner today. I ate 4 of the 5 slices of bruschetta (my oldest ate a piece) and 1 slice of the pizza and I was full! There's really something to be said about adding fiber to your diet. Now I'm sitting down with my beloved coffee (which I'm drinking less of these days) enjoying the peace of the kids being in bed. It won't be long before I'll be turning it because I've got another long, busy day tomorrow but I'm going to get in some Facebook time before I do.
