Let Me Eat Cake!

Friday was my youngest son's birthday. He's 7 and so excited. He was counting down all week. With a birthday comes cake and ice cream and, in my house, that means two cakes. We have one the day of the birthday and one for the birthday party. I have to admit that I didn't do very well at all with the cake.


After I poured the batter into the pan, I was licking the bowl, so to speak. Who doesn't love cake batter?! That's what I thought. I had one small slice of the first cake and only a bite of the second cake. Today, however, I made cupcakes and, again, I licked the bowl. I won't eat any of the cupcakes because I don't like the cream cheese icing my husband requested.

Maybe that's how I should make all of my baked goods. If I use icing that I don't like, I won't be tempted to eat them. If I know me, I'll just scrape off the icing and eat the cake. Ugh!

I'm looking forward to the holidays so I can try out some low calorie goodies. I found a great recipe for apple upside down cake and it looks amazing! I usually bake a lot during the holidays and I like to experiment with different treats.

It's time for me to get going. I've got a turkey in the oven and I need to start working on all of the sides to go along with it. Have a great Sunday!
